After a snowy day on the slopes, warm the body and soul with this savory Parisian menu featuring French classics from Stella’s wood fired oven.

Dinner Menu

Welcome
sparkling aperitif

Canapes
smoked salmon on croissant crostini, neufchatel cheese, chopped olive salad, fines herb
apple cider brined crispy pork belly skewer, camembert cheese, apple-cranberry compote
buttered vol au vents with wild mushroom ragout, agrodolce pickled onion, pecorino romano, frisee
steak tartare on woodfired sourdough; dijon, capers, shallot, chives

First Course
savory brie and raclette crepe, local honey, baby arugula salad with apple-dijon vinaigrette, candied pecans, blood orange coulis, pommes frites

Second Course
moules à la marinière, white wine cream and lemon aioli emulsion broth, wilted kale and chanterelle mushroom salad, herb gremolata

Entree
classic cassoulet; slow woodfire braised duck confit and bean stew with cognac, pork sausage, and ventreche lardon, frisee-herb salad with sherry vinaigrette and pickled onion

Dessert
fresh made choux pastry, armagnac-pear custard filling, creme anglaise, hazelnut-dark chocolate drizzle, kumquat-ginger marmalade, pumpernickel tuille
