recado negro fried dungeness crab enchiladas, pomegranate, esquites, queso cotija, marinated cabbage, crema fresca, sikil p’ak
Entree
achiote and sour orange marinated pork jowl braised in banana leaves, frijoles colados, pineapple marmalade, cilantro-chaya chutney
Dessert
pineapple tamale with raisin and walnut, ancho chili dark chocolate ganache, orange sherbert, cinnamon churro, tamarind syrup
